Friday Yum

A while back I wrote about Schar Ladyfingers and said they were awful.  I tasted them and then stuck them in the cabinet.  The other night I wanted a quick treat and decided to try using them as a base for these bars.  They were really good and I’ve changed my opinion of the Ladyfingers.  🙂

I thought I’d share this today incase y’all need something quick and easy this weekend for parties or tailgating / football watchin’.

For my non-gluten free family and friends (readers too if I have any who can eat wheat) this works both ways with no modifications.  Just pick a wheat based cookie or graham cracker for the base and you’re good to go.  🙂

This is the last official summer grilling weekend and Papa Lupiac likes it when I talk about him on the blog so I’m gonna post this funny pic for him today.  🙂

He’s always wanting a new bbq pit.  I saw this pic and thought of you, Papa Lupiac.   I’ll try to sneak ya one home from Walmart .  😉

I’m off to make a rum cake and some potato salad for the weekend.  Hope it’s gonna be a good / relaxing / delicious one for y’all too.  🙂

Quick Cookie Bars 

1 1/2 cup finely ground Cookies or Graham Crackers (any kind)

1 1/2 sticks of butter  (you really only need one stick but the recipe says 1 1/2)

1 cup nuts  (any kind)

2 cups chips (any kind or combo)  I used Butterscotch and Chocolate.

1 (14 oz) can sweetened condensed milk 

Grind up the cookies in a blender / bullet or food processor then measure out 1 1/2 cups.  Stir in melted butter and press into pan (I used a brownie pan).  Bake for about 5 minutes.

Remove from oven and top with nuts then chips.

Pour can of milk over.  I like to take a spatula and spread it around to make sure it’s evenly distributed.

Put back in the oven for about 20 minutes or until the milk gets bubbly and starts to brown around the edges of the pan.

Remove from the oven and let cool for at least 20 minutes then cut into squares.  The longer you let it cool the easier it is to cut and the better they hold together.

Quick.  Easy.  Delicious.  🙂

Cinnamon chips mixed with butterscotch chips are really good in this recipe during the fall (that’s the only time I can ever find the cinnamon chips).

Gluten Free Rustic Bread, Y’all

I used to make No Knead Bread all the time when it was first the rage but then I moved on to other stuff and had completely forgotten about it until gfandme posted her version last week.

The only Le Creuset pots I have are either the small French onion soup bowls I used today or large pots.  From experience I knew I didn’t want to go too large or you risk the dough spreading out and looking more like focaccia than a roll.  I was going to just use a casserole dish but then I got scared that it might not be able to handle the high heat.

As I was reading the recipe again I saw where gfandme said the finished bread would be about the amount of 4 rolls so I decided to pull out these small bowls and just make two.

I used 2/3 of her recipe…because I only wanted to use 1 cup of flour incase it didn’t work.

Besides cutting the amounts down the only other changes I made were using Cup4Cup for the flour and in place of 1/4 cup of water I used my water roux.

I couldn’t have been happier with the results.  I would have never believed this would work gluten free.  It was crusty and crispy on the outside but super chewy on the inside.

I loved the size of the smaller individual rolls so much that next time I make this I will increase the amount of dough…divide it into small rolls and then cook them all in one of my larger LC pots.

I used most of mine to sop up the gravy from this meal…

Today I’m making Salisbury Steak / Mashed Potatoes / Gravy / Peas and hopefully (fingers crossed) this rustic bread.    Since I haven’t cooked any of that yet / don’t have any pics (still getting back in the groove) I’m going to spread some bloggy love today.  🙂  These are a few of my favorites (or just fascinators) – some are gluten free and some are not.

Rich Kids of Instagram

Let’s start with the completely mindless.  😉   I discoverd this one last week while doped up on pain meds.  It’s certainly not anything I’d visit on a daily basis or anything but I will admit to spending a little too much time looking thru the pics in the middle of a sleepless night last week.

This is a compilation of rich kid photos.  What I learned from this site?  Rich kids are ridiculously obsessed with their watches.  Now, I don’t even own a watch…who needs a watch anymore with phones and technology attatched to our hands all day long?…so I found their need to take pics of their watches interesting.

Also…if I ever woke up one day rich enough to own a jet…I would just pay someone to tell me the time.  😉  

 
gf and me

gf and me are a couple living in Alberta Canada.

I could just post a pic of a plate of gluten free tortillas…which I now churn out every other day thanks to their inspiration…and that would say all you need to know about them 🙂  but they do a lot of what I like to call home-y comfort food type recipes.  Apple Crumble Muffins.  Banana Bread.  Mac and Cheese.  Campfire treats.  Rustic Bread.  Carrot Cake.  The list goes on and on.

They are also my favorite kind of cooks –  they don’t flip out on you when you tweak a recipe because you lack ingreadients or just can’t use a certain ingredient for some reason.

Gluten – Free Gus 

Gluten Free Gus is written by Pam.  Her son, Gus was diagnoised celiac when he was 6 (I think he turned 21 recently).  On GFG she shares the recipes and tricks she’s perfected over the years.  This blog is a mix of healthy and comfort.  Donuts.  French Toast.  Spaggetti Squash.  Pasta.  Scones.  Quiche and more.

She takes the most gorgeous food pics AND I covet her red and white collander.  🙂

The Southern Lady Cooks

This one has nothing to do with gluten free eating but it’s one my favs.  She has a pic on the homepage of some sweat iced tea and calls it “the house wine of the south”.  Love that.  🙂   The recipes are decidedly southern.  Ham and Bean Soup.  Bisquits.  Cobblers.  Cube Steak.  Beef Liver.  Etc.

So far I haven’t had any problems converting recipes to gluten free by just swaping out flour and / or adjusting liquid amounts.

The Londoner

The Londoner is Rosie.  She looks like she could be Kate Middleton’s sister.  Her blog is really just a London lifestyle / fashion blog but she does recipes and travel posts too.  As someone who has always dreamed of going to London I just really love all her pics and stories about local stuff.  

Lords of the Drinks

As most of you probably know by now I prefer my alchol in the form of cake 😉 but I come from a long line of Czech drinkers and I have a minor in history so the concept for this blog thoroughly fascinates me.

Lords of the Drinks (or LOTD as they call themselves) are two dudes from Bulgaria – Nikolay (the blog owner) and Micky his best friend.  They write about historical drinking, personal drinking stories, recipes and pub reviews.

Mama is Sheryl.  She’s not gluten free and she makes all sorts of delicious looking treats.  Cakes.  Muffins.  Breads and more.   She’s not afraid of sugar or butter and she compares cooking to art.  I couldn’t agree more. 🙂

Her Apple Streusel Coffee Cake  is at the top of my list of things to try (tweaked to gluten free of course) as soon as I switch over from summer to fall recipes next month.  This is South East Texas.  Sometimes the only way we can signal seasonal changes is with food. 😉

She too takes gorgeous pictures and gives me serious camera envy.  🙂

Homemade Enchilada Sauce / Refrieds and Rice (Got the rice from a little local restaurant.)  This was the best thing I’ve eaten in almost two weeks.  🙂

Don’t know for sure what’s on the menu this week.  I guess it’ll just depend on how the healing goes.

This week was by far the roughest since the celiac diagnosis.  I wanted soft wheat stuff like Cream of Wheat and grilled cheese (not together) and I got cranky quite a few times but I survived.  And even came up with a few things that can work as a go-to menu when a cold or flu comes along in the future.   (Specifically the gravy because when I’m sick I usually want mashed potatoes and gravy.)

I know a lot of kids are going back to school today so I hope that’s going well for the kiddos…and all the parents too.  🙂

Five Things Friday

Since I’m just now today trying to introduce soft solids (don’t have any food / blog worthy pics or stories to share) I decided to do a ‘getting to know you’ type post today.  No pics just words.  If that’s not your thang…I hope you have a really good weekend…and the Friday summer song is at the end of the post.  🙂

I think my blog makes it pretty clear that my biggest passions are cooking and music and that my family is the most important thing in the world to me.  So for this I’m doing …five random things that would probably never make it into my day to day writing.

1.  When I was little (like 4ish) I wanted to be a meat market lady when I grew up. 

My Meme owned a beauty shop that was attached to her house.  One of her friends / customers (Sally) worked at the little meat market around the block.  Sometimes she would bring our meat order with her to her appointment and sometimes we would walk to the market to pick it up.  She would let me behind the counter and would let me pick up the meat and put it on the paper.  Can you image a business letting a kid do that today?

I was so fascinated with the big rolls of butcher paper.  At home I’d gather up the largest brown leaves I could find in the yard plus some rocks then I would make Sister Lupiac play Meat Market.  I’d ‘wrap’ up her ‘order’ of rock ‘meat’ in my leaf ‘butcher paper’.  Of course her ‘order’ was just whatever I told her to order.  She’s two years younger than me and it’s really a miracle she never actually tried to eat the rocks or the leaves.  🙂

2.  I have two post grad degrees and still manage to say some of the ‘dumbest’ things. 

For example one day I was on my way to renew my drivers license.  I got to the the location only to find it had moved.  I called home…from the car…on my cell…to ask if anyone knew where it had moved.

Mama Lupiac:  I don’t know do you want me to look it up?

Me:  No that’s ok I’m going to have to stop and find a phone I’ll just ask them for directions.

Mama Lupiac:  What do you mean find a phone?  How are talking to me right now?

There are far too many similar exchanges to count but this is Mama Lupiac’s fav…so here’s another chance to laugh about this one, ML.  🙂   

3.  I lettered in football in high school.  🙂 

I was one of the first female managers for my high school football team.  The grandpa of a curent NFL QB was our coach.

I’d loved football from a really early age and in 7th grade read a story in Seventeen about a girl manager for her highschool team somewhere in Wisconsin.  I decided right then I was going to do that when I got to high school…and I did.  🙂

4.  I am ridiculously passionate about music.  But more than that I can hear a song and tell you exactly where I was when that song was playing at some point…what I was wearing…the weather…who else was there and sometimes what they were wearing too. 

I know this isn’t special and most people do that with songs that are important to them.  I do it with songs I’ve heard once or even songs I don’t even like.   Earlier today…cue the TV show Dallas theme song – hardly a song that should evoke great emotion or a trip down memory lane.  When I hear that I’m instanly 6…at my Aunt S’s and she’s teaching me to eat ham / cheese and potato chip sandwiches (chips INSIDE the sandwich).   Thank you so much, Aunt S for that life long addiction.  🙂

Again, nothing super special but certain people in my life think it’s a parlor game kinda talent.

(Also some people are probably reading this right now and wondering if I’m 90 and what the heck a parlor game is?  Young’un’s, it’s like gaming but with everyone in the same room instead of hiding behind computers or TV screens.  😉 )

5.  I am a HUGE anglophile

I just know I was meant to spend a winter living in a London flat on the Thames just once in my life.  🙂  Hunter Green Wellies / Black Riding Pants / Knee length Sweaters…OK maybe fashion wise I was meant to do that in the mid-80’s but still  🙂 …

I love love love all things UK.  The love affair started when I was about 8 and my Mema bought herself a small new color TV for her bedroom and gave me her old little black and white.  I took it home and put it in my room but without cable all it would pick up was CBS and PBS.

Back then the only way we got any BBC programing was from PBS on Saturday nights.  I got addicted to reruns of old BBC shows.   I was definitely the most ‘cultured’ elementary school student in Rural Route South TX.   Then came Princess Diana /all things Royals /  Def Leppard / Duran Duran / George Micheal and later, Nigela.  Coupling will forever be one of my most favorite TV shows ever produced…anywhere.  And today I have a London proxy account so I can access British content online.

Bonus ‘getting to know you’…to address an email I recieved.   I write this blog for myself.  I write it for my family and friends who have shown nothing but overwhelmingly positive support.  I write it for my readers…current and future who might take some meal inspiration or just comfort in hearing from someone suffering similar health issues.  I value all feedback but this space is and will always be a reflection of me…not what someone else would like me to be.

So to the person who felt the need to take time out of their no doubt busy day to let me know that all the smilies I use here are quote “f—ing stupid”…

I’m so sorry you feel that way.  🙂   I drew smilies on every letter I ever wrote long before computers.  I love smilies.  It shouldn’t bother you that I do.  If it does then you shouldn’t waste your time reading something that annoys you so.  🙂

But if by some small chance someone has a gun to your head and is forcing you to read this space then by all means type ‘salsa’ five times and I’ll call 911 for ya.  😉

Whinesday Wednesday (tooth update)

Chicken Broth, Milkshake, Mashed Potatoes and Gravy.

 

Kathie Lee and Hoda have Winesday Wednesday so I’m gonna go with Whinesday Wednesday today.

I’m not really whining as much as just in doped up pain but the tooth extraction has been worse h3ll than I ever imagined.  From the extraction itself which included the appearance of what must be the dental equivalent of the jaws of life and a Dremel mini sander…to what the dentist called a giant infection…to non stop bleeding for 13 straight hours…this hasn’t been a great experience at all.

I’m in pain / doped up on Vicodin, antibiotics and steroids / and hungry.  I’ve been eating nothing but what you see above and all I want in the world is some Cream of Wheat.  😦   Gluten free is hard everyday but it’s especially rough when you’re sick.

One good thing from all of this is that I’m in love with the gluten free gravy I came up with for the mashed potatoes.  It’s a cross between chicken gravy and white cream gravy.  🙂

So anyway that’s the tooth update and to change the mood let’s switch from teeth to ears as I leave y’all with some more summer ear candy.  🙂

I don’t know if anyone else associates this song with summer but I always will.

The True Blue record (Papa Don’t Preach / Open Your Heart / True Blue / Live to Tell / etc) came out the summer before my sophomore year of high school.  I obviously couldn’t drive yet and I remember Mama Lupiac stopping at K-Mart and I went in and bought this cassette the day it came out.  Then she let me listen to it the whole hour and a half drive to visit the grandparents.  A huge deal considering to this day Mama Lupiac’s choice of music is old school country stuff.  🙂  This was pre CD’s so you had to manually rewind a song to listen to it again.  Over the course of that summer I think I wore out the section of tape containing this one.  (Oh and I wanted Mo’s red dress from the video so much.  🙂 )

Last Meal Motown Monday

Today is tooth extraction day…Why do they call it that?  Like it’s supposed to make me feel more at ease than ‘pulling’ …so I spent the weekend eating like I was having a last meal on death row.  Well old school death row since they only get a sandwich now.

(I ate this stuff over the course of Friday – Sunday and I’d really only want some of it as a last meal…but it would have been wasteful to make Rum Cake / Dr. Pepper Cake / Chocolate Chip Cookies and I sure wasn’t going to break ‘no soda’ for fake death row.)

I’m sure being this dramatic over a tooth extraction sounds silly but it’s really hard for my body to heal with such a weakened immune system.  It takes even little stuff forever to heal.  And I mean what if I can’t chew solids for a week or more?  How’s this kitchen girl supposed to function on chicken broth and ice cream?

A new gluten free find.  These weren’t that great.  Normally I’d just make homemade but they had these on sale plus an in store coupon and when I saw they were gluten free I had to get ’em.  Ya know…for blogging purposes.  😉  The texture was good.  They were very creamy but something was off with the flavor profile.  I doubt I’d try them again but they have 3 other flavors.  Make sure and check the side panel / ingredients though because only 2 of them (this one and Bacon Ranch) are gluten free.

Did y’all notice I ate something green? 😉 …and isn’t the homemade ‘TV dinner’ cute?  (Can only chew on one side of my mouth but I had to try to force down some beef for iron / protein.)

I was going to make the simple Oatmeal Scotchie recipe from the back of the butterscotch chips package.  I got started and then realized I was missing some ingredients.  I only had one stick of butter so I made up the difference with lard (remember the theme of this post – last meal…oh who am I kiddin’ I’d have used it on a random Tuesday 😉 )  I also only had 2 cups of gluten free oats.  SO I just used the 2 cups plus an additional spoonful or 2 of Cup4Cup.  I had no idea what I’d end up with but I thought if it didn’t work I could at least eat some dough.   They were delicious.  They were kinda like the butterscotch version of my fav Alexis Stewart cookie.  Crispy (but not crunchy) and also chewy.  I will definitely make them again like this (with less oats) but I would use all butter (unless I’m out).

Made up my juice for the week.  Last time I wrote about it I told y’all how I was juicing up fresh spinach and then freezing it so it’s fresh tasting and ready to go each time.  I was using Ziploc bags but they’re kind of messy not to mention wasteful.  I’ve switched over to these Ball Freezer ‘jars’.  They save space with no mess and you can drink it straight out of the jar.

If you’re like me and hate lime in your corn tortillas…La Banderita is really good…gluten free…and no lime.  🙂   I’d never tried the Joe’s mix before and it was really good.

Cheese Enchiladas / Ranchero Sauce / Rice / Beans and sad clown water.  (Ten days without a root beer or any kind of soda.)

These pics don’t do this cherry / lime concoction justice at all.  I followed this recipe from Simply Gluten – Free subbing Cup4Cup for her blend and making it as muffins instead of a loaf.  I left out the nuts and also iced them with Key Lime Pie icing.  I love Cherry Limeade so I thought the flavors would probably work well here too.  They definitely did and the cake part was so good.  It would be great with cherry icing or even a simple vanilla / buttercream too.

So that was the Yumm.

On to the Uuuuggg.

A broken tooth.  😦   I’ve never even had a cavity but now thanks to my absorption issues I have a very badly broken tooth – as in not savable / must be pulled.  Thankfully it’s the very last tooth at the back of the lower teeth so it can’t be seen but still.  😦

I take a blood thinner for my lupus clotting disorder and  that has to be adjusted for a few days before I can have the tooth pulled on Monday.  Like I said I’ve never even had a cavity so I’m kind of scared of the extraction.  Hopefully it won’t be too bad.

Needless to say the eats around here won’t be blog worthy for the next week but I have some saved recipes to post.

Kickin’ the weekend off a little early here on the blog.  Only three more summer weekends left…make ’em memorable.  🙂

OK, y’all if I was happy with last weeks tortillas…I was dancin’ an Irish Jig over this meal.  🙂

This is Texas.  I think you can go to jail for not eating chicken fried steak at least once a month.  😉

More importantly I think it’s in my DNA.

I’ve written about my grandma Mema and grandma Meme before and will no doubt write about them many more times during the life of this blog.  🙂

You see this is a food blog and I didn’t learn to cook from the Food network.  I learned at their sides.  Of all my cousins on both sides of my family I was the only one who cared anything about cooking.  While the rest were playing I was cracking eggs or stirring or anything else they’d let me do.  Of everything in my life those moments are the ones I cherish the most.

Meme is Mama Lupiac’s Mom (or Mama as her kids called her).  She was always bright and happy.  She would wear the brightest color clothes you can imagine – whether they matched or not.  😉    She owned a beauty shop and loved that funky lipstick that came in a bright green tube and was supposed to change colors on different people but was really just one hot mess shade of fuchsia.  She cooked many things but her specialties were chocolate chip cookies and chicken fried steak.  We lived right around the corner from her until I was 5 when we moved an hour and a half away.  Every other Friday after school we would load up the car and go back to see her (and Papa Lupiac’s side of the fam).  More often than not she had chicken fried steak / mashed potatoes / gravy / veg / sweet tea…and a fuchsia lipped smile waiting as we walked in the door.  🙂

It was one of the first full meals I learned to cook and a life without chicken fried just isn’t acceptable.

And now it doesn’t have to be.  For the first time in months we had chicken fried (that NOONE could tell was made with Cup4Cup) and white gravy.  The chicken fried was perfect…the gravy still needs a little work (it was a little too thin) but this was hands down my favorite gluten free meal so far.

I am more impressed with Cup4Cup each time I use it.  Since the chicken fried was such a success I’m going to try crispy chicken strips next.

I’m doing much better after my glutening Friday.  I think I’ve decided that from now on when I eat out I’m going to stick to mostly Mexican with the occasional steak house thrown in.  I know…y’all are saying now Jennifer how is that any different from oh I don’t know…the way you’ve eaten your whole life?  Well it’s not.  🙂  But I do like to mix in other places every now and then.  It’s just so hard to eat out with celiac and I’ve decided that to me…Mexican is truly the only thing in the world that is worth accidental glutening.  From now on if I’m going to take the risk of having to suffer for days or all week…it’s going to have to be completely worth it.  And Gringos / Casa you are always worth it.  🙂

(If there are any other hard core music freaks reading this…yes I know Aretha was never technically on the Motown label but she is most definitely the Motown sound / Detroit to the core.  🙂 )

Friday Road Trip aka Glutened at Fuddruckers :(

Today I took a quick trip into the Katy TX area.  The Sugar Land area is my normal go-to area so I’m not really familiar with anything in Katy other than the huge outlet mall.

We went to Fuddruckers which is right in front of the mall.  I’ve eaten there before and had no problems.  Plus they have gluten free buns now and I wanted to try one.  (I think they’re only available in TX locations right now.)

The bun looked really good but I didn’t love it or even like it.  I’ll stick to just meat and cheese from now on.  I can’t really describe what was wrong with it.  The texture was just… wrong.

I’ve eaten at this exact Fuddruckers location since my diagnosis with no problems.  The only thing I ate different today was the gluten free bun and the milk shake.  I’m thinking the bun probably got cross contaminated from the cooking surface.  Something did because I was glutened.  😦

After I got sick from lunch shopping time was cut short – the kitchen store for a skillet / bread pan and dough scoops.  Plus candy.   Y’all should know by now I buy dresses at the grocery store and go to the outlet mall for candy.  🙂

Caramel / Chocolate / Pecan Bears and milk balls (those are for Papa Lupiac).  I doubt I’ll be having any for a few days now though.

I’m off to drink some cinnamon tea since it helped so much the last time I was glutened – and I really hope I don’t end up making a midnight booty call to my love Barq’s.  😉
